パパドムにのせたミントライタ Mint Raita on a papadom

ストレートの香りはタイム、セージ、オレガノ、ミントが並ぶ地中海のハーブガーデンを春の早朝に散歩しているかのよう。 リンゴと洋梨のフルーティな香りが徐々に現れ、アイスクリームにオレンジスライスのハチミツ・バニラ煮をのせたさらに甘い香りも現れる。味にもこの甘いテーマが続く：トフィーでグレージングした洋梨の砂糖煮のカラメルソース掛け、しかし間もなくひんやりと新鮮な香りが戻ってくる – パパドム（インドのクラッカー）にのせたミントライタ（インディアンサラダ）。 加水すると、香りはブラックカラント、白檀、ショウガの香りを伴う「シナモンスパイス香油」のようにやわらかくなる。その味はフレッシュフルーツサラダのようにジューシーで甘く、スパイシーで、私たち全員がホットトディを思い出した。 The aroma neat was like an early spring morning walk through a Mediterranean herb garden with thyme, sage, oregano as well as mint. Fruity notes of apples and pears gradually appear and so do sweeter notes of honey-vanilla spiced orange slices on ice cream. The taste continues the sweet theme; toffee glazed poached pears with a caramel sauce but soon the cool and fresh notes are back – mint raita on papadom. Water turns the nose mellow like ‘cinnamon spice perfume oil’ with notes of black currant, sandalwood and ginger. The taste is now as juicy as a fresh fruit salad, sweet and spicy reminding us all of a hot toddy.
