We imagined heavenly incense from burning heather, hickory, rosemary, lavender and thyme; lots of pepper and tarry driftwood - not to mention honey, Topic bars, lemon, lime and barbeque pork ribs. We found the unreduced taste earth-shaking and explosive - charred applewood twigs on hot stones - cinder toffee sweetness cut by lemon oil and light seaweed - scrummy! Even in reduction the nose was eye-watering - white pepper, ashes, graphite and sherbet all whooshing up from hot springs; toffee apple, melon, banana and maple-cured Parma ham. The reduced palate was sweet and fruity, with granite, earthy herbs and scorched heather, all from the Cuillins.
