The palate delivered a big hit of spice with a balanced sweetness that suggested nut chocolate, vanilla sponge cake and icing sugar. A dash of water released fennel, tarragon and sage with accentuated candied orange, marmalade and kumquat plus creamy textures of butter and croissants. Ripe mangoes and satsumas followed on the palate with liquorice and chocolate orange before hints of camphor and spearmint rounded out the finish.
