山の小川の清々しさ Cool as a mountain stream

香りによって、大麦糖、糖蜜、ヒース、焦げた小枝、鞍と石工のエプロンが思い浮かぶ　―また、ハム、ローズマリー、タイムの香りも発見。味は、思わず息をのむほどではないが、辛くておいしい　―　甘辛く、糖蜜や腐葉土、ココアパウダーの苦みも少し感じる。 加水後の香りには、ミント、ユーカリの木、メンソールタバコ、それから花火が入っていた空箱があらわれる。味は、山の小川のように清々しく、フェンネル、ベリック カクルズ(ミント菓子)、タールのついたロープ、松林とビーチの間のどこかで焚かれたにわかづくりの焚き木を感じる。 蒸溜所はここ8年間女性が所有している。 カラー：大事に育てたトチの実 (1.4) ソサエティ日本支部の一言　【ハーブをまぶした甘くジューシーなハム。ビターチョコにスペアミントの爽やかな風。シガーの重厚な香ばしさが、燃え盛る焚き火の煙とともに複雑な余韻を形成する。】 The nose reminded us of barley sugars, treacle, heather, burning twigs, saddles and a mason’s apron – we also detected ham, rosemary and thyme. The palate was big and hot, if not breath-taking – sweet and salty, with treacle, leaf-mould and some cocoa powder bitterness. The reduced nose found mint, eucalyptus and menthol cigarettes and then an empty box of fireworks. The palate now seemed ‘cool as a mountain stream’, with flavours of fennel, Berwick Cockles (mint sweets), tarry ropes and a makeshift campfire somewhere between a pine forest and the beach. The distillery was owned by a woman for eight years. Colour – cherished conkers (1.4)
