The palate rather implied belly pork, roasted with sugar and spice; plus burnt twigs, tarry ropes, liquorice and Peshwari naan; `Makes you want to sing!` someone said - `On top of a mountain, naked` came the reply. The reduced nose was sweet, chalky and fruity, with lemon and salt on a nicely charred sea-bass from the barbeque. The reduced palate, an incredible blend of sweetness and smoke with spicy hints.
