[ノーズ] 甘い香りと塩辛い香りが鼻を抜ける。 ドーリーミクスチャー（イギリスの砂糖菓子）、ゴールデンシロップやフレンチドレッシングのサラダを添えたスモークサーモン、塩漬け鯖。絆創膏、春の牧草地、遠方から漂ってくる湿地のヒースが燃えた香り。
[パレット] 良いような悪いような -- とても軽く、芳香性のスモークは我々の味蕾をじらせるしわずかに塩辛い。酸の効いたマンサニージャシェリーと粉砂糖をまぶした菓子・リコリス・酸味のあるトフィ。
加水すると香りはより抑え気味になる。 -- 塩味、ハーブのサムファイア（セリ科）、小麦粉とポテトの団子、マグロのカルパッチョ。味わいは甘く華やかなピート香、潮風、バター味のポテトスコーン。うずきも、震えも、心地良さも。
A sweet and salty combo hit the nose – dolly mixtures and golden syrup alongside smoked salmon and salty mackerel with vinaigrette salad – we also got Elastoplasts, spring meadows and the smoke from distant heather moor-burning. The taste was pleasing and teasing – very light, perfumed smoke tantalised our taste buds and slightly salty, citric Manzanilla sherry flirted with chalky sweets, liquorice and acidic toffee. The reduced nose was more restrained – salty, herbal samphire and floury potato dumplings with tuna carpaccio. The palate now tempted us with sweet floral peat-smoke, sea spray and buttered tattie scones. A tingling, trembling titillation of the senses.
