This cornucopia of incredible creativity had aromatic Bourbon influence, something of a Middle-eastern market (nutmeg, cinnamon, pistachio nuts, dates) and further hints of exotica from Baklava and Kirsch. The unreduced palate seemed big, blousy and buxom and straight out of the Arabian Nights – incense, Frankincense and honey-soaked oak, caramelized pineapple, dessert sweetmeats and Mon Chéri chocolates (dark chocolate, cherry). The reduced nose was evocative and stunning – truffle oil, sticky Medjool dates, chocolate croissants and Moroccan baked lamb. The palate, which didn’t need water, yet took it well, was balanced and fascinating – juicy tangy orange (including the peel), caramelised sugar and cinnamon.nd honey-soaked oak.
