[ノーズ]麦の甘さと木々の豪華さが混ざり合い、それはオレンジシロップ、大麦糖。ヒマラヤスギ、ビャクダン、ヒッコリーでスモークしたリブとシナモン。 [パレット]口の中で味わいが爆発して、香木、ジャマイカンジンジャーケーキ、キャロットケーキ、チリとブラックカラントの芳香剤。シンプルに言うと、オークのおがくず、特にスパイスの香りが私達を躍らせた。味わいはまたすごく、甘いバクラバ、かすかにアニスそして…言葉がもう見つからない。 The nose was a playful wrestling match between unctuous barley sweetness and gorgeous intimations of wood – orange syrup, barley sugars, marzipan petit fours and rum baba represented the former; the latter gave us cedar, sandalwood, hickory-smoked ribs and cinnamon. The palate was a blast of flavours – perfumed wood, Jamaican ginger cake, carrot cake, chilli and blackcurrant pastilles. In reduction, it tickled our noses with oak sawdust and breezes from an Indian market, especially gulab jamun and spice. The palate was still a taste bomb – honeyed baklava, hints of anise and.... well words dried up – replaced by lip-smacking sounds of private enjoyment.
