Leather wine-skins and flamenco floorboards /
革製のワイン袋とフラメンコのダンスフロア

第一印象はオレンジゼリー、オレンジシャーベットとラベンダー。続いてダンネージ熟成庫、革製のワイン袋とフラメンコでボロボロになった床板。 厚みのある味わいは、シロップ漬けのピーチとチョコレートのママレードケーキ、フローラルの香り、ジンジャーピクルスとコショウのピリッとさを感じる。加水するとオレンジのレーズンケーキ、ブランブルゼリー、マロングラッセ、砂糖をまぶしたアーモンド、ルバーブキャンディへと変化する。甘く、暖かいワインのよう。シート状にしたフルーツのお菓子、サマープディング、シロップ漬けのショウガ、マルサラで漬けたビスコッティ-絹のように滑らかなオークのタンニンを感じフィニッシュへ。 24年間 ex-bourbon woodで熟成し、 second-fill oloroso hogsheadへ移し替え。 First impressions were orange jellied fruits and orange sorbet, maybe some lavender; then we found dunnage, wine in leather skins and flamenco-battered floorboards. The chewy palate had peaches in syrup and chocolate marmalade cake, some elusive floral notes, pickled ginger and peppery heat. Adding water led the nose to orange raisin cake, bramble jelly, marrons glaces, sugared almonds and rhubarb rock. The palate was now sweet, warm and winey; fruit leathers, summer pudding, stem ginger in syrup and biscotti dunked in Marsala - silky oak tannins to finish. After 24 years in ex-bourbon wood we introduced this to a second-fill oloroso hogshead.
