天使と悪魔 Angels and Demons

アイラ島の逆巻く海峡から、この激しくもオイリーでスモーキーな海岸の美酒はやってきた – ハーブの煙、タールっぽい薬くさい臭い、塩辛いタプナード、潮流にうち捨てられた浜辺の香りがふわりと漂い、甘酸っぱい果物（パイナップル、プルーム）、バニラ、 米酢もあった。 味は、蜂蜜、トロピカル・ドライフルーツ（ココナッツ、バナナ、杏）、ブランブルジャムの天使のような甘さと、タールっぽい煙、木材の灰、クレオソートで防腐処理した納屋のドア、酢漬け生姜、白胡椒、そして煙突掃除夫のボロ布という悪魔のような地獄の噴出が均衡している。 加水した香りはバイキングの火葬船、アニスの実、救急箱、リコリスオールソートを感じさせる。味はガイ・フォークス夜祭のトフィーアップルと「ブラックジャック」チューを思い起こす − お見事！ From the turbulent Sound of Islay comes this turbulent, oily, smoky, coastal nectar – the nose wafts herbal smoke, tarry medicinal notes, salty tapenade and tide-abandoned beaches – but also sweet-and-sour fruits (pineapple, soor plooms), vanilla and rice-wine vinegar. The palate balances the angelic sweetness of honey, dried tropical fruits (coconut, banana, apricot) and bramble jam with the demonic hell-belch of tarry smoke, wood ash, creosoted barn doors, pickled ginger, white pepper and a chimney sweep’s rags. The reduced nose suggests Viking boat burning, aniseed, first-aid boxes and Liquorice Allsorts. The palate evokes toffee apples and Black Jack chews on bonfire night – brilliant!
