[ノーズ] 最初に甘い香り。噛み応えのあるレモンシュガークッキー、ジャム入りバタービスケット、チョコミントキャンディー、そしてタラゴンの繊細なハーブ/スパイスの香り、タイのグリーンカレーのバジルの香り。 [パレット] スパイスがあふれていてまるでマゾヒスティック -- 燃えるような感覚と強烈な辛さが舌・唇をヒリヒリさせる。加水するとその味わいの虜になる。シナモン風味のシロップ漬けの梨、乳脂肪分の高いクロテッドクリームの香りが現れ、味にも大きな変化が--スパイシーさは残るものの、バランスの取れたバニラパンナコッタのベリーコンポート添えに。 A perfumed sweetness greeted the Panel at first. Chewy lemon sugar cookies, jam filled butter biscuits and chocolate mint candy, before a delicate herbal/spice aroma of tarragon and Thai basil in a green curry arrived. To taste spice, however, was the dominant factor, almost ‘benign masochism’ – a burning sensation, intense heat, lip smacking and tongue tingling. We all reached for the water and now the scent was even more enticing. Pears poached in sugar syrup with cinnamon and clotted cream and what a transformation on the palate; still plenty of spice left but now balanced with the sweetness of vanilla panna cotta served with a berry compote.
