[ノーズ] 最初の印象はまるで燃えているハリエニシダの藪、その後トーストココナッツ、ローストピーナッツ、ルバーブと生姜を添えたスモークした鯖へと変化する。 [パレット] まず最初に鯖とツナのステーキのグリル辛いホースラディッシュ添え、ヘビーチャーしたブラッドオレンジような味わい。加水すると甘くフルーティーなアップルクランブル、ヒッコリーでスモークした桃の甘味、桃はピクルスもしくはスモークされたジャム、レモングラスとメンソールたばこの煙へと変化してフィニッシュ。 The first impression was like a burning gorse bush which after a while moved on to toasted coconut and roasted peanuts as well as smoked mackerels with rhubarb and ginger. The initial taste felt like you had just blowtorched those mackerels together with a few tuna steaks and served them with hot horseradish sauce and heavily charred blood oranges. Water added the sweet fruitiness of apple crumble and hickory smoked grilled peaches whilst on the palate a lot sweeter as well, the peaches now being pickled or made into a smoked jam, with a fragrant lemongrass and menthol cigarette smoke finish.
