[ノーズ]松の樹液、甘いピート、微かなハーブ煙、甘い紅茶、甘草、お香、ペトリコールと残り火の驚くべき香り。カーボン紙、うま味、液体調味料、エレガントな塩分、古い魚とり網、ヘシアンクロス、微かなビーフストックとタール抽出分も感じる。クローブ、塩味のピスタチオ、ローズウォーター、羊毛、燻製獣肉、バタートースト、ローストした胡桃、パッションフルーツコーディアルとフリーズドライストロベリー。 [パレット]生き生きとした樟脳、ジャスミン、古いシリングエール、ハーブティー、ブラッドオレンジと背景にはピートスモークを感じる。通常では感じないタラゴン、ビーンスプラウト、ユーカリとクランベリーのグレービーソース。加水するとトロピカルフルーツシロップが現れる。スターフルーツ、キウイ、パイナップル、コーラキャンディとフェンネルシード。ブラックオリーブ、ローズウォーターとマラスキーノジュースの味わいも。 19年間second-fill hogsheadで熟成した後、 American oak PX caskに移し替え。 A stunning nose of pine sap, sweet peat, wispy herbal smoke, sugary black tea, liquorice, incense, petrichor and coal embers. There's also carbon paper, umami, liquid seasonings, elegant salinity, some old creel nets, hessian and hints of beef stock and tar extract. Reduction offers cloves, salted pistachios, rosewater, oily sheep wool, cured game meats, brown toast with molten salted butter, toasted walnuts, passion fruit cordial and freeze-dried strawberries. The mouth is alive with camphor, jasmine, old shilling ales, herbal teas, blood orange and a background peat smoke. There's also unusual notes such as tarragon and bean sprouts, eucalyptus and cranberry gravy. Add water and it’s all on tropical fruit syrups now. Star fruit, kiwi, pineapple, cola cubes and fennel seed. Some black olives, rosewater and maraschino juices too. Just beautiful.
