最初の香りは穏やかな煙さ―まるで甘いチリソーセージの燻製とグリルされた鰊の燻製を、ヘーゼルナッツの枝とヘザーをくべたキャンプファイアーで炙っているようだ。
それがあまりにも穏やかな情景なので、生のままは美味しい！という誤った安心感を抱かせる。風が吹くと燻製ソーセージの煙が顔にあたり言葉を失う。
最初の衝撃の後、わずかな果実と油っぽい香りに気づくが、スモークと灰が独占している。加水すると、香りはさらに甘くなり、蜂蜜が塗られたガモン（燻製ベーコン）のよう。また、味も甘く灰だらけでクリーミー、ボイルドハムを散りばめた白いペッパーコーンソースの味がする―チャールズ皇太子も嗜むべき。

The initial nose has gentle smokiness, like a burning camp fire using hazelnut wood sticks and heather with smoked sweet Chilli sausages as well as kippers being grilled. This very gentle scene lulled us into a false sense of security as the taste neat is big! The wind blows the smoked sausage fumes right into our faces, leaving us speechless. After the initial shock there are some fruity and oily notes to detect but smoke and ash dominate. With water, the nose is turning sweeter like a honey cured gammon and the taste is also sweet, ashy and creamy like a white peppercorn sauce over boiled ham - Prince Charles should enjoy this one.
