海の甘美さ Maritime mellifluosity

香りは私たちを直ぐにアイラ島に連れていった – モルティング室のピートの煙、海藻、フェンネルとタラゴンを使った魚のバーベキュー。甘いオランダ・タバコ、シロップ・スポンジ・プディング、そして鉛筆の削り屑 – 快い取り合わせ。 味には大きくて刺激的な煙、リコリス、タール、 砂糖掛けフェンネルシード、五香粉ローストポーク、海苔、そしてニューヘブン村の魚箱があった。 加水すると、香りはさらに海っぽくなるようだった – 浜辺の焚き火の煙、潮だまり、タールで汚れたロープ、漁船、燻製小屋、そこに塩辛い柑橘類、ハーブ、シロップのような甘さがあって釣り合っている。味はガスバーナーで焼いたサバと焙ったホタテ貝が感じられたが、甘さもたっぷりあった – 全て上出来。 「好き嫌いの分かれる」蒸溜所から。 The nose took us immediately to Islay – peat-smoke in the maltings, seaweed, barbecued fish with fennel and tarragon; sweet Dutch tobacco, syrup sponge pudding and pencil shavings – an agreeable mix. The palate had big, astringent smoke, liquorice, tar, sugar-coated fennel seeds, five-spice roast pork, sushi seaweed and Newhaven fish boxes. In reduction, the nose seemed even more maritime – beach bonfire smoke, rock-pools, tarry ropes, fishing boats and smoke houses, with salty citrus, herbs and syrupy sweetness to balance. The palate suggested blow-torched mackerel and seared scallops, but with lots of sweetness – thumbs up all round. From the ‘love-it-or-hate-it’ distillery.
