色合いははっきりしていて香りも強い。土臭くて、刺激的で甘くてフルーティな香りがすべて現れ、全てが強く主張してきて、それに値する。ラムで香りづけされたパンナコッタやコーヒーとスパイスクリームのベリー、パンプキンピーカンクランチマフィンと軽く焦がしたシナモンデニッシュも感じる。どっしりとした味わいで、胡椒を振りかけたジンジャービーフ、有塩バターのリンゴのガレットメープルホイップクリーム添えを感じる。一滴の水で熟成したカルヴァドスを感じる。フルーティでオークとスパイシーな香りがバランスよく表せれていて味わいはスパイスキャラメルソースがけの塩アップルパイの味わい。 The colour is bold and the nose is big. Earthy, pungent and sweet fruity aromas were all apparent and trying hard to grab our full attention and that is what it deserves. Panna cotta aromatized with rum and coffee served with a spiced coulis of berries, pumpkin pecan crunch muffins and a slightly burned cinnamon Danish. Massive on the palate; peppered ginger beef stir fry and salted-butter apple galette with maple whipped syrup. A drop of water and an aged calvados emerged. Fruity, oaky and spicy aromas all very well balanced and the taste was that of salted apple pie with spiced caramel sauce.
