We could tell that we were going on a journey…to a rather weird and wonderful place. The nose was immediately dirty, but immeasurably appealing. In an old stone barn on the west coast of Scotland a jar of sandwich pickle had been spilt on to some damp hay. Hanging on the wall were hessian sacks and fishing equipment. The taste was sweet, heavily smoky and mouth numbing with intense aniseed and fennel notes. A touch of water and we were wearing greasy overalls and painting creosote onto a seaside fence, whilst a 1930s classic sports car fumed past. The finish was long and strong, ending with a more familiar sweet smoky barley wisp.
