オークニーのエッセンス

[ノーズ] 色もオークニー島の夕日の色で、香りもまるで自分が典型的なハイランド地方の‘ブラックハウス’の中に居るかのように感じさせる--石積みの家の中央にあるピートを燃やす暖炉のススのために低い草ぶき屋根の梁が黒くなっている。 [パレット] ニートではハム・タラのパイ、ベーコン、スモークしたタラのような甘いスモークの香り。 加水するとタティーズアンドヘリン（塩漬けニシンとじゃがいも）の塩っぽい香りを感じ、焚き火の周りに座ってOrkneyinga Saga（オークニー島の歴史物語）を聞いているような気分に。 24年間ex-bourbon refill hogsheadで熟成した後、1st fill American oak Pedro Ximenez hogsheadにて熟成。 The colour was an Orcadian sunset and the aroma found us inside a typical Highland ‘Blackhouse’ with the central peat-fired hearth and the soot having turned the rafters of the low thatched roof black. Sweet smoke on the palate neat, like a ham and haddie pie - bacon and smoked haddock. Water added the salty sea scent of Tatties ‘n’ Herrin (salt herrings and potatoes) and by then we were all sitting around the fire attentively listening to stories from the Orkneyinga Saga. After 24 years in an ex-bourbon refill hogshead, we transferred this whisky directly into a 1st fill American oak Pedro Ximenez hogshead for the remainder of its maturation.
